Ingredients

250g spaghetti or linguine
300g ripe cherry tomatoes, halved
2 tablespoons extra virgin olive oil
2 cloves garlic, thinly sliced
A pinch of red pepper flakes, optional
Salt, to taste
freshly ground black pepper, to taste
A handful of fresh basil leaves, torn
1 large burrata, about 200g
Freshly grated Parmigiano Reggiano, for serving

Method

Step 1

 Cook the pasta

Bring a large pot of salted water to a boil. Cook the pasta until al dente, according to package instructions. Reserve about 1/2 cup of the pasta water, then drain.

Step 2

Prepare the sauce

While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the garlic and sauté for about 1 minute, until fragrant but not browned. Add the cherry tomatoes and a pinch of salt. Cook for 7–10 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Step 3

Combine pasta and sauce

Add the drained pasta to the skillet. Toss to coat well in the tomato mixture, adding a splash of pasta water if needed to create a silky sauce. Stir in the torn basil and adjust seasoning with salt and pepper.

Step 4

Plate and serve

Divide the pasta among plates. Place a generous portion of burrata on top of each. Drizzle with olive oil and garnish with fresh basil. Add Parmigiano Reggiano if desired.
